Honestly, cheese is one of the most addictive foods ever! When I turned vegan, pizza and cheese sandwiches were the first things to be missed. WHAT MAKES VEGAN CHEESE STRETCH?
Tapioca Starch. Any kind of starch will help bind the batter together but tapioca starch seems to be doing a great job of it. In some recipes where potato is used, this is a primary reason for using it in the recipe. When something is made to bind, it gets the elastic property depending on the strength of the binding agent.
WHAT MAKES VEGAN CHEESE MELT?
AGAR AGAR. This is one ingredient I would use to get that melting feel. A favourable property of agar agar is that it melts when heated, unline some other similar ingredients which do a great job of holding/making jelly like texture but don’t melt on reheating. There are several ways to get this melt property but due to ease of accessibility and availability of this product, we use this.
